The History and Characteristics of Supplì

Supplì, a popular starter before pizza or as a takeaway snack, are a staple of Roman street food and pizzeria cuisine. Different from the Sicilian arancini, supplì are prepared with tomato ragù, coated in breadcrumbs, and filled with a mozzarella center.

They are commonly served in pizzerie, tavole calde (casual eateries with affordable meals), and pizze al taglio (takeaway pizza shops) throughout Rome.

“Supplì - not to be confused with Sicilian arancini - are cooked with tomato ragù, coated with bread crumbs and contain a mozzarella heart.”
